Modern Cake Decorating - Beginners (IW)
Get hands on with all the modern cake decorating techniques in this introductory practical course. You'll learn how to cover cakes with buttercream, fondant and ganache, and perfect a wide range of piping techniques.
Each week you'll tackle a different cake decorating style, including rose cupcakes, sharp-edged fondant cake, semi-naked cake, drip cake and unicorn cake!
Cupcakes for week one are included, as are all icings, embellishments, tools, cake boxes etc. Students will need to bring cakes as directed for weeks 2, 3 and 5 (see course outline for further details).
Time: Mondays, 4 June to 2 July 2018, 9:30am-11:00am
Duration: 5 x 1.5 hour workshops, 7.5 hours total

Week 1. Decorating cupcakes – intro to ganache and fondant decorating techniques including handmade roses and leaves
Week 2. Semi-naked cake – learn how to evenly cut and fill a cake and smooth with a rustic semi-naked finish, and learn how to prepare and wrap fresh flowers for cake decoration.
Week 3. Ganaching a drip cake – learn how to cover a cake with chocolate ganache, achieve sharp edges, and create a ganache drip effect
Week 4. Working with fondant – learn the basics of covering a cake with fondant to obtain sharp edges and making a decorative teddy bear
Week 5. Unicorn cake – bring together all your skills with the incredibly popular unicorn design; smoothly cover a cake with buttercream then decorate with multi-coloured swirls and fondant toppers
Students to bring:
Recipes for chocolate mud cake, caramel mud cake and vanilla butter cake are provided. Teacher can also help with sourcing premade cakes if preferred.
Students should wear an apron, tie their hair back, wear closed-toed shoes and don't wear any dangling jewellery.
Lesley is the owner and operator of For Heaven’s Cake, based in Coogee. Although working in finance for much of her professional life, Lesley had always had a passion for baking. Ten years ago she decided to take the plunge and change careers, training in Baking and Pastry at Sydney TAFE. Whilst attending this course, Lesley discovered a love of cake decorating, which led to her starting her own business producing celebration cakes, cupcakes and cookies. Lesley is happy to share her passion with students and looks forward to welcoming you all to class!
